Nešto kao paprenjaci / Something Like Gingerbread Cookies


I was really in the mood for some tea and cookies today, so I thought of gingerbread cookies because of their specific taste, a great mixture of cinnamon, honey and nutmeg. They can't be considered as plain cookies because of the amazing smell and spicy flavor they have, and if you like to play with playdough, then you'll love making them. In any way, pleasure is guaranteed. 

Danas sam bila raspoložena za čaj i kolačiće, stoga sam se sjetila paprenjaka zbog njihovog specifičnog okusa, ukusnog spoja cimeta, meda i muškatnog oraščića. Ne mogu se svrstati pod obične kolačiće zbog prekrasnog mirisa i pomalo pikantnog okusa, a ako se volite igrati s plastelinom, uživat ćete u izradi paprenjaka. U svakom slučaju, bit ćete zadovoljni.

Ingredients:

Dough
100 grams of honey
100 grams of sugar
100 grams of butter
2 eggs
450 grams of flour
1 tea spoon of baking powder
1 tea spoon of cinnamon
1/2 tea spoon of nutmeg 
1/2 tea spoon of clove

Lemon Icing
2 table spoons of fresh lemon juice
100 grams of icing sugar


Sastojci:

Tijesto
100 grama meda
100 grama šećera
100 grama margarina
2 jaja
450 grama brašna
1 žličica praška za pecivo
1 žličica cimeta
1/2 žličice muškatnog oraščića
1/2 žličice klinčića

Glazura od limuna
2 žlice svježeg limunovog soka
100 grama šećera u prahu
On a very low flame melt together honey, sugar and butter. Add flour, baking powder, cinnamon, nutmeg, clove and eggs. Mix until you get an even dough. Leave it to cool before stretching the dough.
Stretch the dough and use your favorite cookie cutter to cut it. Repeat the process until you use all the dough.
Bake on 180°C for 10-15 minutes, depending how thin you stretch the dough.

Na laganoj vatri otopite med, šećer i margarin. Dodajte brašno, prašak za pecivo, cimet, muškatni oraščić, klinčić i jaja. Mjesite dok ne dobijete glatko tijesto. Ostavite da se ohladi prije nego ćete ga razvaljati.
Razvaljajte tijesto i izvadite svoju najdražu modlu za kolače kako biste izrezivali željene oblike od tijesta. Ponavljajte proces dok ne iskoristite svo tijesto. Pecite 10-15 minuta na 180°C, ovisno o debljini kolačića.

For the lemon icing you should simply mix at high speed fresh lemon juice and icing sugar. Also you can play with the icing and color it with food colors. This time I went with simple and delicate white look.

Priprema glazure od limuna je jednostavna, izmiksajte sok od limuna i šećer u prahu. Možete se igrati s glazurom, te ju obojati bojom za hranu po želji. Ovoga puta sam se odlučila za jednostavan bijeli izgled.

Onion Rings with Almonds? Yes, I like :) / Pohani luk s bademima? Sviđa mi se

When it's cold outside like it has been in the last days, I only have junk food in my mind. This is my first go at onion rings, and I love it. I tried to throw in something new, to avoid being completely boring, so that's how almonds appeared in this story. For full recipe, read below.

Za vrijeme ove hladnoće koja nas prati proteklih dana, jedino o čemu mogu misliti je brza hrana. Ovo je moj prvi pokušaj s pohanim lukom, i jako sam zadovoljna. Pokušala sam dodati nešto novo, kako recept ne bi bio još jedan u nizu, i tako su se bademi pojavili u ovoj priči. Za cijeli recept, pročitajte dolje.


Ingredients:
2 onions
1 egg
3 table spoons of flour
3 table spoons of milk
pinch of salt, pepper and cayenne pepper
5 almonds finely chopped
50 grams of bread crumbs
250 ml of oil for frying


Sastojci:
2 luka
1 jaje
3 žlice brašna
3 žlice mlijeka
prstohvat soli, papra i ljute paprike u prahu
5 badema sitno nasjeckanih
50 grama krušnih mrvica
250 ml ulja za pohanje
Cut the onion in thin slices (about 5 mm) and separate the rings.
In a bowl whisk the egg, add flour and milk and combine everything to get a smooth mixture.
Finish with adding a pinch of salt, pepper and cayenne pepper.
In another bowl combine the bread crumbs with finely chopped almonds.

Tanko narežite luk (oko 5 mm) i razdvojite kolutove.
U posudi izmutite jaje, umiješajte brašno i mlijeko i miješajte dok smjesa ne postane jednolična.
Za kraj dodajte prstohvat soli, papra i ljute paprike u prahu.
U drugoj posudi pomiješajte krušne mrvice sa sitno najseckanim bademima.

Place the onion rings in the dough, then gently in the bread crumbs and almond mixture.
Heat the pan with frying oil and be ready to serve onion rings immediately after frying for the perfect crunchy taste. Enjoy :) ...


Kolutove luka prvo uvaljajte u razmućeno tijesto, zatim u mješavinu krušnih mrvica i badema.
Zagrijte tavu s uljem za pohanje i budite spremni pohani luk odmah poslužiti kako biste uživali u potpuno hrskavom doživljaju.

Tortelloni With Broccoli Filling / Tortelloni punjeni brokulama

Nothing particurarly meaningful about my first choice of recipe to post, except that I really love fresh pasta. I had some leftovers from broccoli sauce and an idea I could make this simple but yummy tortelloni.

U odabiru recepta za moj prvi post nema ništa osobito značajno, osim toga da jednostavno obožavam domaću tjesteninu. Imala sam ostatke umaka od brokula i ideju napraviti ove jednostavne ali super ukusne tortellone.



The  Filling:
200 grams of broccoli
1 garlic clove
2 table spoons of olive oil
Salt and pepper

Boil the broccoli in salt water. Cut the garlic clove in half, fry in a small pan until golden, then remove it. Add the cooked broccoli in the pan and fry for 5 minutes on medium flame. Mash the broccoli sauce and add pinch of salt and pepper.  

Punjenje:
200 grama  brokula
1 režanj češnjaka
2 žlice maslinovog ulja
Sol i papar

Prokuhajte brokulu u posoljenoj vodi. Prerežite češnjak na pola, popržite na maslinovom ulju dok ne dobije zlatnu boju, zatim ga izvadite. Dodajte kuhane brokule u tavu i pirjajte na srednjoj vatri 5 minuta.  Napravite pire od brokula i dodajte prstohvat soli i papra. 



The Pasta Dough:
300 grams of all purpose flour
3 eggs
1 spoon of sunflower oil
1 tea spoon of salt

If you don't have a dough machine I will give you few tips how to prepare pasta dough manually.
Combine salt and flour, place it on the work surface. It's much easier to do it on the work surface instead of a bowl, because the dough is very hard.
In the flour and salt mixture create a small well in the center. Add eggs and olive oil in the well, and combine slowly all the ingredients until you get even pasta dough. Cut the dough in smaller pieces and run through the pasta machine several times until you get smooth and elastic thin pasta leaves.

Domaća tjestenina:
300 grama glatkog brašna
3 jaja
1 žlica suncokretovog ulja
1 žličica soli

U slučaju da nemate stroj za obradu tijesta, napisat ću nekoliko savjeta kako ručno pripremiti tjesteninu. Pomiješajte sol i brašno, te ih stavite na radnu površinu. Puno je jednostavnije pripremati tjesteninu na radnoj površini nego u posudi, jer je domaća tjestenina tvrda.
U smjesi brašna i soli napravite malu izdubinu u sredini. Jaja i maslinovo ulje dodajte u udubinu i izmjesite sve sastojke dok ne dobijete jednoličnu smjesu. Podijelite tjesteninu na manje komade i razvucite ju kroz ručni stroj za tjesteninu. To je najbolje ponoviti nekoliko puta kako bisto dobili jednoličnu i elastičnu tjesteninu.

Folding Tortelloni in 4 Steps:
1. Cut the pasta in squares
2. Put filling in the middle of the square
3. Fold the pasta to create a triangle
4. Roll two of the edges around your finger and close it together



Izrada tortellona u 4 koraka:
1. Izrežite tjesteninu na kvadrate
2. Stavite nadjev u sredinu
3. Preklopite tjesteninu kako biste dobili trokut
4. Oko svog prsta povežite dva vrha trokuta, te ih pritisnite kako biste ih zalijepili.


Cooking and the Final Touch:
70 grams of butter
Parmesan for serving

Cook tortelloni in the boiling water with some salt. When they rise at the top of the cooking pot, they are cooked. Remove them from the water, and put in a warm pan with some melted butter. Serve with some Parmesan. Enjoy :) .

Tortellone prokuhajte u posoljenoj ključaloj vodi. Kada isplivaju na površinu lonca, skuhani su. Izvadite ih iz vode, i stavite u zagrijanu tavu u kojoj ste otopili maslac. Poslužite s parmezanom. Uživajte :) .
